Air Fryer Gluten Free Eggplant Balls


Air fried gluten free eggplant balls are a delicious appetizer or main course. Roll them small or big depending on your needs.

Wash, peel and dice your eggplant. You want to make cubes approximately the same size so they cook evenly.

Coat the bottom of a frying pan with olive oil. Add in eggplant and toss to coat with oil. Eggplant tends to soak up like a sponge so you may need to add more oil a little bit at a time. Sprinkle salt to taste and fry eggplant on medium stirring often. Once eggplant is almost soft, add in minced garlic, stir and allow to fry until aromatic. Don't let it brown, it gets bitter.

Remove eggplant from pan with a slotted spoon and place onto a platter lined with paper towel. Allow to cool completely and excess oil to be absorbed by paper towel.

Place cooled eggplant into a large bowl. Mash with a potato masher until fairly smooth. Start by adding 1 cup of breadcrumbs and 1/2 cup of flour, salt to taste, garlic powder and onion powder to taste.

Drain and rinse Cannellini beans and place into a small bowl. Mash beans with a potato masher until almost smooth leaving slight small chunks. Add beans into eggplant bowl. Mix together well with your hands like you would a meatloaf or meatballs. Check texture. If mixture is too wet, add more breadcrumbs and flour until it is dry enough to roll into a ball.

Form balls and place into the air fryer. Spray the bottom of the balls slightly with olive oil so they don't stick. IF YOU DON'T HAVE AN AIR FRYER, YOU CAN PLACE BALLS ONTO A COOKIE TRAY LINED WITH PARCMENT PAPER SPRAYED WITH OIL AND PLACE INTO A PREHEATED 450 DEGREE OVEN.


Cooking time will vary depending on the size of the balls and the method of cooking - air fryer or oven. Cook until balls are crisp on top then flip them and cook until the other side is crisp.

There are many ways to serve these delicious balls. I ate them once with Gluten Free Balsamic Vinaigrette dressing and then with Greek Yogurt Sauce. Greek Yogurt Sauce recipe is in the middle of the page on the falafel post.

Ingredients:

Olive oil - for cooking and spraying

5 Cloves garlic, minced

1 Large eggplant peeled and diced

Salt to taste

Gluten free breadcrumbs - amount to be determined by texture of mixture

Gluten free flour - amount to be determined by texture of mixture

Parmesan cheese to taste - optional - for vegans eliminate or replace

Onion powder to taste - McCormick is generally gluten free unless otherwise noted

Garlic powder to taste - McCormick is generally gluten free unless otherwise noted

1 15.5 oz can of Cannellini beans, drained and rinsed
