Gluten Free Falafel - A quick and easy gluten free falafel ball recipe that is full of flavor. The kids love to dip the little balls into the Greek yogurt sauce. Shhhh, don't tell them this meal is full of protein. To them it's just fun!

How to make falafels:
Prepare a baking sheet with parchment paper and spray with olive oil.
Combine all ingredients and mash with a potato masher until beans are smashed. Mix everything together well.

If mixture is too wet, add more garbanzo flour a little bit at a time.
Roll mixture into small balls. Place onto baking sheet about an inch apart.
Place into a 350 degree preheated oven. Bake for approximately 20 minutes until crisp and browned.
Let cool 5 minutes before serving with Greek yogurt sauce. Enjoy!
How to make Greek yogurt sauce:
While falafels are baking, combine all ingredients and mix well. Place into refrigerator to keep chilled.
Serve with falafel balls as a dipping sauce.
1 cup black beans drained and rinsed
1/2 cup diced yellow onion
3 garlic cloves, minced
1/4 cup gluten free garbanzo - chickpea - flour
1 packet Sazon Goya
parsley flakes to taste
2 tablespoons olive oil
Greek Yogurt Sauce:
1/2 cup gluten free plain Greek yogurt
1 tablespoon lemon juice
1/2 teaspoon sugar
pinch of garlic powder
1/2 teaspoon salt
1/4 cup cooked frozen or fresh spinach - chopped
