You will need cold mashed potatoes, either homemade or store bought. I prefer homemade. I made homemade mashed potatoes the night before and put them in the refrigerator overnight. I intentionally made them a bit drier than if I were making them to serve as just mashed potatoes.
I generally prefer my mashed potatoes very smooth, but for this recipe, rather than mix with my mixer, I used my potato masher. (see video)
Remove potatoes from refrigerator and add tapioca flour to them. Mix with a spoon and then with your hands. Keep potatoes very cold. Shape them into croquettes gently with your hands and place onto a plate. (see video)

Melt butter into a bowl and let cool. I ground up my gluten free bead crumbs into fine crumbs then added them into a separate bowl. Season your breadcrumbs to taste and mix well. I used garlic powder, onion powder, and parsley. Add salt and mix again. (see video)
Dip croquettes into the butter then into the breadcrumbs and place into your air fryer that's been sprayed with olive oil. Spritz the croquettes on the top with olive oil as well.
Set air fryer to 400 degrees and fry for about 6 minutes. Gently turn the croquettes over with a fork and fry another 6 to 8 minutes until golden brown.
Serve with creamy garlic sauce for dipping and enjoy!
Ingredients:
Approximately 3 cups cold mashed potatoes
1/2 cup Tapioca flour
4 tablespoons butter - melted
olive oil
1 cup gluten free bread crumbs - add seasonings of your choice i.e. garlic powder, onion powder, basil, parsley and oregano
