Gluten Free Air Fryer Vegan Potato Cakes

CORRECTION: I just realized now that I've made a mistake and this is not vegan though it is vegetarian. It contains yogurt. It can, however, be vegan if the yogurt is substituted with a vegan product of your choice. My apologies.

These delicious gluten free air fryer potato cakes are prefect as an appetizer or a side dish.

Peel potatoes and rinse under cool water. Slice into cubes and steam or boil until soft. Mash potatoes well with a potato masher. (see video)

Add salt, garlic powder, onion powder, parsley, flour and bread crumbs to potatoes. Mix well with hands like you would mix a meatball. (see video)

Add Greek yogurt and mix with a spoon until well combined. (see video)

Take a small amount of mixture and roll into a ball then flatten gently with your hand. Spray with olive oil. Place into air fryer and spray the other side with olive oil. (see video)


Cook on 400 for 10 minutes. Flip potato cakes over and cook at 400 another 5 - 6 minutes until golden brown.

Serve and enjoy.


Ingredients:

4 medium potatoes, peeled

1/2 teaspoon salt

1 teaspoon garlic powder

1/2 teaspoon onion powder

parsley to taste

1 tablespoon gluten free measure for measure flour

1 tablespoon gluten free plain bread crumbs

1/4 cup gluten free Greek yogurt (most yogurt is gluten free but double check)

olive oil to spray or brush potato cakes
