
A gluten free apple crumble that melts in your mouth. Sweet but not overbearing. A scrumptious treat for the whole family.

How to cook the apples:
Peel and cut apples into small cubes. Place them into a pot of cold water so they don't get brown. Drain water and place apples back into the pot with 2 tablespoons water. Add sugar and cinnamon. Cook on medium heat until apples are very soft. Stir often. Add butter and vanilla. Cook about 2 more minutes, stirring often. Remove from heat and set aside.

How to make the gluten free crumble:
Mix flour, rice flakes, brown sugar, sugar and cinnamon in a bowl. Once well combined, add in sliced cold butter. Using a pastry blender or a fork, blend the butter into the flour mixture. Then use your hands until it turns into a crumble. If you can squeeze it together and it forms a clump, then you can flake the clump away, it is ready.
Spray your pan with olive oil and brush it to grease the bottom and sides of the pan. Fill pan with apples and layer them evenly. Pour the crumble over the apples and spread evenly. Place into a preheated 350 degree oven and bake for 30 - 35 minutes until golden brown.
Remove from oven and let cool 5 minutes. You can top with vanilla ice cream, whipped cream or custard if desired. Serve warm and enjoy.
Ingredients:
For the apples:
3 - 4 green apples peeled, sliced and cubed
3 teaspoons sugar
3 teaspoon cinnamon
2 tablespoons water
4 tablespoons butter
1/4 teaspoon vanilla
For the crumble:
1 cup gluten free flour - I prefer King Arthur's Measure for Measure
1/4 cup gluten free rice flakes
1/4 cup light brown sugar
1/4 cup sugar
1 teaspoon cinnamon
8 tablespoons cold butter
