If you love apples and cinnamon, this is the bread for you. Fluffy, sweet but not overwhelming. Absolutely delicious.

In a medium bowl, using an electric mixer, cream together butter with 2/3 cups of sugar. Beat in applesauce and vanilla. Set aside. (see video)
Peel and cube apples. Mix the remaining 1/3 of a cup of sugar with cinnamon. Mix the cubed apples with the cinnamon sugar. (see video)
Add flour and milk and mix into creamed butter mixture and stir with a spatula or spoon. (see video)

Add in baking powder or the baking powder substitute. To see how I make the substitute - see video. Immediately add to recipe while sizzling.
Spread half the batter into a loaf pan lined with parchment paper and sprayed with olive oil. Place half the apples on top of the batter. Add the rest of the batter on top of the apples and then the rest of the apples on top of the batter. You are layering like a lasagna. Press down gently into the batter. (see video)

Place into a preheated 350 degree oven. Bake for 45 minutes to one hour, then cover the pan with aluminum foil and bake another 15 to 30 minutes. Check with a toothpick at 45 minutes, if it's still fairly wet, bake another 15 minutes - total of one hour. After covering with foil, check at 15 minutes. Again, if it's still not dry, bake for another 15 minutes - total of 30 minutes.
Cool in the pan for 15 minutes then transfer the bread gently to a wire rack to cool completely.
In a small bowl, combine the glaze ingredients. Mix until smooth. Drizzle over cooled bread. Serve and enjoy! (see video)

How to make Bread:
1 1/2 cups gluten free flour
2 tsp. baking powder (I substitute and make my own - 2 teaspoons fresh lemon juice, 1/2 teaspoon baking soda)
8 tablespoons butter, softened
1 cup sugar, divided
1/2 cup applesauce
1 1/2 teaspoons vanilla
1/2 cup milk left at room temperature
2 large apples, peeled and cubed
1 1/2 teaspoons cinnamon

1/2 cup powdered sugar
1/4 teaspoon cinnamon
1 tablespoon milk - room temperature
