A delicious, soft yet sturdy bread. A favorite at barbecues, dinner parties and holidays.

I doubled the recipe on 4/13/23 and made it in my Bundt pan (every time I say that word now I think of my Big Fat Greek Wedding!)

In a large bowel, mash your bananas until smooth. Add in melted butter, applesauce, peach juice, vanilla and milk. Mix together well. Set aside. (see video)

Make sure the bowl is big enough as you will be adding your dry ingredients to your wet ingredients later on. (see video)
Use a spoon to place flour into a measuring cup and use a leveler to even out. Sift into a bowl. Don't skip this step. It makes the bread fluffy rather than dense. Once you sift the flour, be very gentle with it. Pour in the sugar, then sprinkle the baking soda, Xanthan
gum, salt and cinnamon. Very gently blend together well. Set aside. (see video)

The Stigma Around Different or Restricted Diets
Pour the dry ingredients into the wet ingredients and gently fold. Do NOT overmix. When all the flour is wet, you are done. (see video)

Line your bread pan with parchment paper and either spray with non stick spray or use some melted butter or oil. I brushed on some olive oil. If you use a Bundt pan, brush olive oil on bottom and sides. (see video)
Fill the pan with the batter and smooth out the top. Place into a preheated 350 degree oven. Bake 45 - 60 minutes. Check at 45 minutes. Mine baked for 60 minutes. (see video)
When a toothpick comes out dry, the bread is done. Remove pan from oven and allow bread to cool for 15 minutes in the pan. Transfer to a rack and allow to cool completely. Once cool, cut a slice by cutting back and forth, not pressing down. (see video)
Serve and top with butter, cream cheese, jam or any spread of your choice.

3 large extremely ripe bananas
1 stick butter, melted
1/4 cup Unsweetened applesauce
1 tsp. Vanilla
1/4 cup Milk

2 cups Gluten Free measure for measure flour
1 tsp. Baking soda
1/4 teaspoon Xanthan gum even if your flour already contains it
1/2 tsp. Salt
1/2 cup Sugar
3/4 tsp. Cinnamon
Olive oil to coat pan
