Gluten Free Banana Cake

Sometimes, you just desire baked goods. This banana cake will fulfill all your desires!

I chose to use a Bundt pan, but you can use any pan you like. Every time I hear the word Bundt, I think of "My Big Fat Greek Wedding." Who else loved that movie?

Mash two ripe bananas and set aside. Try to get them as smooth as possible. The more ripe the bananas, the better.

Sift two cups of flour into a bowl. Add cinnamon, salt, and baking soda. Whisk together well. Set bowl aside. (see above video)

Pour sugar into a separate bowl. Plop in softened butter. Mix with an electric hand mixer until smooth. In a cup mix flax seed with water and stir well. Set aside for approximately 10 minutes and allow to thicken. This replaces the eggs. If you can use eggs, use two. (see video)

Pour vanilla into creamed butter. Drop in applesauce, milk, flax seed mixture and stir together well. (see video)

Add mushed banana into the wet mixture. Stir together well. (see video)

Slowly add the flour mixture to the wet ingredients by the spoonful (I used a large serving spoon) and fold in gently. Don't overmix. (see video)

Lightly grease the pan then add a small amount of flour. Make sure you get the bottom and sides well with both oil and flour. Spoon batter into the pan. Even out with a spatula. (see video)

Place into a preheated 325 degree oven. Check at 20 minutes. Mine baked for a little over 30 minutes. When a toothpick comes out clean, the cake is done. (see video)

Allow cake to cool until it can be handled. Run a butter knife around edges and center. Carefully remove cake from pan and allow to complete the cooling process on a cooling rack.

If desired, you can add a white frosting of your choice. I prefer mine without. Serve and enjoy.


Ingredients:

2 cups of Gluten Free flour

1 teaspoon cinnamon

1/2 teaspoon salt

1 teaspoon baking soda

1/2 cup sugar

5 tablespoons softened butter

1 tablespoon milled flax seeds (or 2 eggs if you can eat eggs)

3 tablespoons water

1/4 cup applesauce

1/2 cup milk

2 large ripe bananas (mashed)

Olive oil (very small amount to coat the baking pan. Or, if you can, use a non stick spray)
