
Deliciously moist, flavorful bread that can easily be sliced and frozen.

Lightly grease your pan with oil so your bread doesn't stick. You can add some flour too. I don't find a need. My bread doesn't stick with just the oil. (see video above)
Peel and slice bananas into a bowl. Smash with a fork or a potato masher tool. Try to get the bananas as smooth as possible. (see video)
Pour in applesauce, olive oil, milk, vanilla and sugar and whisk together well. Set aside. You will add the dry ingredients to the wet ingredients later. (see video)
Sift flour into wet ingredients. Sprinkle in baking soda, salt, cinnamon and cocoa. (see video)

Pour chocolate chips into a separate bowl and coat with some flour. Stir up well then drop into the batter. Fold the batter until all ingredients are thoroughly mixed together. Be sure to fold gently allowing air to penetrate. Don't overmix. You don't want a dense bread. (see video) Check out where I buy specialty items.
Spoon batter into the greased bread pan. Be sure to make the top even using a spatula. Place into a preheated 350 degree oven. Check after a half hour. Mine baked for 40 minutes. When a toothpick stuck into the middle comes out clean, it's done. (see video)
Remove pan from oven and let it cool about 15 minutes. Remove bread from pan and allow to fully cool on rack before cutting. You want it to steam so it is soft and moist, not hard and dense.
You can cut into slices and freeze individually. I wrapped mine in tinfoil and placed in the refrigerator.

Two large ripe bananas
1/2 cup applesauce
1/3 cup olive oil
1/4 cup milk
1 teaspoon vanilla
1/2 cup sugar
2 cups sifted gluten free flour (I used King Arthur's Measure for Measure)
1 teaspoon baking soda
1/2 teaspoon cinnamon
1/2 teaspoon
1/2 teaspoon salt
1/2 teaspoon Hershey's Cocoa
1/2 cup gluten free chocolate chips (Enjoy Life Brand)
