
A delicious cookie everyone will love. Decorate any way you want. I chose various styles with mine to make them more interesting.

In medium bowl, whisk together the gluten free flour and salt. Set aside. (see video)
Place softened butter into a bowl and add sugar. Using a handheld mixer or a stand mixer cream together until light and fluffy. Add applesauce and vanilla and almond extract, if you can use that ingredient. (see video)
Add the dry ingredients to the creamed butter and mix well forming a soft dough. (see video)
Lay out a piece of plastic wrap and wrap the dough in it. Roll the dough into a log. Place in the refrigerator overnight to create a firm log. (see video)

Line a baking sheet with parchment paper or grease your cooking sheet. Slice the cookies from the log and try to keep them all about the same thickness so they cook evenly. (see video)
Place into a preheated 350 degree oven. Bake approximately 15 minutes until done. You may want to check after 12 minutes. Only the edges should be slightly browned. (see video)
Remove from oven and cool on pan about 10 minutes. Move to a baking rack and allow to cool completely. (see video)
Once your cookies are completely cooled, melt the chocolate chips and olive oil. I use my microwave setting that says melt. If you don't have a microwave you can do it on a stovetop. If you do have a microwave but not that setting, use 50% power and microwave about a minute at a time, stirring each time, until all chocolate is melted. (see video)
I used a spoon to decorate the cookies with melted chocolate. Place uncovered in the refrigerator to allow chocolate to set and harden. (see video)
Don't stack cookies. Lay them on a large platter and cover well with tin foil. Refrigerate until ready to serve. Cookies taste best cold. (see video)
Ingredients:
2 1/4 cups King Arthur's Measure for Measure Gluten Free Flour
1/4 teaspoon salt
2 sticks butter, softened
3/4 cup granulated sugar
1/2 cup unsweetened applesauce
1 teaspoon pure vanilla
1/2 teaspoon almond extract - optional - I can't use it as I'm allergic to nuts.
1 cup semi-sweet chocolate chips - I use Enjoy Life Brand which is free of ingredients I'm allergic to.
2 teaspoons olive oil
