Gluten Free Cinnamon Sugar Cookies

A soft, sweet cookie perfect for a special occasion or holiday.


For the Cookies:

In a large bowl, combine all the dry ingredients. Whisk together well. Set aside.

In a medium bowl, add the wet ingredients and mix well. If you didn't add the baking powder to the dry ingredients, then you will add the substitute later.

Pour the wet ingredients into the dry ingredients. Add baking powder substitute and whisk into a soft cookie dough.


Cover dough with saran wrap and refrigerate for one hour.

For the Cinnamon Sugar:

In a shallow bowl, combine cinnamon and sugar and mix well.


To Make the Cookies:

Use a spoon and place dough into your palms. Roll the dough into a ball then roll in the cinnamon sugar mixture and coat the ball completely. If dough starts to stick to your palm, wet palms a little with water. Even after refrigeration, dough will be soft.


Place onto a cookie sheet lined with parchment paper. Press each cookie down slightly with the back of a spoon dampened with water.


Place into a preheated 350 degree oven. Bake for 15 to 18 minutes until a toothpick comes out clean.


Remove cookies from the oven and let cool about 10 minutes then move to a cooling rack. Frost cookies after they are completely cool.


For the Frosting:

Use a hand held mixer to mix the frosting. Combine all ingredients except the cinnamon and blend well. I make my own powdered sugar by grinding white sugar until it turns to powder.

Use a small rubber spatula to frost cookies using a swirling motion then place cookies into the refrigerator so the frosting sets. Sprinkle cinnamon sugar over the frosting if desired.

Serve and enjoy.


Ingredients:

For the Cookie:

1 cup gluten free flour - I prefer King Arthur's Measure for Measure

1/2 cup tapioca flour

1/2 teaspoon xanthan gum - I add extra even though it's in the flour

1/2 cup brown sugar

1/4 cup white sugar

1 teaspoon cinnamon

1/4 teaspoon salt

1/2 teaspoon baking soda

1 teaspoon baking powder or substitute 1/2 teaspoon lemon juice and 1/4 teaspoon baking soda

1/2 cup butter semi melted and cooled

1/2 cup unsweetened applesauce

1 teaspoon vanilla


For the Cinnamon Sugar: 1/4 cup white sugar

2 1/2 teaspoons ground cinnamon

For the Frosting:

1/4 cup butter semi melted and cooled

3/4 cups powdered sugar - I make my own

1 teaspoon vanilla

2 to 2 1/2 tablespoons milk or heavy cream

1/2 teaspoon cinnamon to sprinkle after frosted if desired
