Gluten Free Cream Cheese Garlic Bites

These gluten free cream cheese garlic bites have a crispy dough outside with a hot, cheesy, slightly salty filling. Perfect as an appetizer for a special occasion.

To see how to roll the dough, use the same procedure as shown in the above video.

Line a cookie sheet with parchment paper and spray a small area with olive oil. Cut the bulb off of the garlic and slice it in half. Place on parchment paper and spray with olive oil. Place into a 400 degree preheated oven and roast 10 - 15 minutes until golden brown and very soft.

While garlic is roasting, prepare dough.

Combine flour, xanthan gum, sugar, salt and baking powder if you can use it. If not, you will add alternative later. Stir to combine.

Add water and baking powder substitute if you have not already added baking powder.

Blend first with a whisk, then with your hands until it forms a dough. Add more water if necessary a little at a time. Roll dough into a ball.

Tear off a large piece of parchment paper and generously spread flour all over it. Place ball of dough on paper. Add flour to top of dough. Press down with your hands, then using a rolling pin - I prefer a small one - roll out dough fairly thin into the shape of a rectangle. Use a knife to cut it into that shape so the edges are even.

Dough will be sticky. You will cover the top and bottom with flour before rolling it out.

Crush garlic into small pieces. Add cream cheese to garlic - you will need to judge the amount to use. If you are going to make the homemade gluten free cream cheese, you will need to make it a few days prior to making this recipe. Add garlic powder, onion powder, parsley and Sazon to mixture. Mix well.

Plop cream cheese mixture onto dough. Spread evenly and be sure to get the edges well.

Grate your cheddar cheese then spread it evenly on top of the cream cheese mixture. Melt butter and using a spoon drip that on top of the dough as well.

Roll dough the same way as the Gluten Free Crispy Muffin Tin Pizza - to see procedure, watch video above. Cut log into pieces the same as shown in video.

Place each individual bite onto a cookie tray lined with parchment paper and sprayed with olive oil. Spray tops of bites with olive oil. Place into a 425 degree preheated oven. Bake 15 - 20 minutes until golden brown.

Remove bites from oven. Allow to cool about 10 minutes. Serve and enjoy.
