Gluten Free Cream Cheese Tomato Rolls

Perfect as appetizers at a gathering, as a snack at home and can easily be brought to both work and school for lunch.

Delightful gluten free cream cheese tomato rolls. Crunchy on the outside, creamy on the inside.
Pour 1 can of diced tomatoes into a bowl. Add 1 cup and 1/4 cup gluten free flour. Mix together well. Squeeze some fresh lemon juice into a cup. Measure 1/2 teaspoon of baking soda into a bowl and add 1/4 teaspoon lemon juice. Mix well and pour mixture into dough as it's sizzling. (see video)
Add salt and sugar to taste. Mix well first with spoon then with hands. If the dough is very wet add a little more flour and mix well. Roll into a ball and cover with a clean dish cloth. Let sit for half an hour. (see video)

Place saran wrap on a clean, dry surface or on a baking mat. Sprinkle some gluten free brown rice flour onto the saran wrap. Place the ball of dough onto the flour. The dough will be drier but still sticky after having sat for half an hour. The rice flour helps with that. Sprinkle rice flour over top of dough and spread with your hand. Cover with another piece of saran wrap. Coat the rolling pin with rice flour and roll out the dough between the two pieces of saran wrap. Use a knife to cut into a square shape. (see video)
Don't discard the dough you cut off. Set it aside for later.
Remove saran wrap from top of dough. Place dollops of cream cheese on dough and spread out evenly. For my homemade cream cheese recipe, click link. At this point if desired you can add flavor. Sprinkle with garlic, add scallions, fresh basil or anything of your choice.
Using the bottom layer of saran wrap, roll the dough into a log. Cut into equal pieces. (see video)
Place the rolls into a steamer. Steam for about 15 minutes. Similar to a dumpling.

Grease the bottom of a glass dish with some olive oil. Remove rolls from steamer and place into glass dish. Brush with olive oil on both sides. Place into a preheated 350 degree oven. Cook until rolls are browned. (see video)
You can dip rolls into homemade red sauce, or any sauce of your liking. Serve and enjoy. These heat up well in the microwave or can be taken to school and eaten at room temperature.
Roll the leftover dough (the dough you trimmed off in order to make the dough square) into balls. Coat entire ball with olive oil and place into air fryer.
Enjoy as a snack. Great to pack in plastic bags or containers for kids to take to school with little packets of sauces or dressings for them to dip them into.

1 can Diced tomatoes
1 and 1/4 cups Gluten free flour
1/2 teaspoon Baking soda
1/4 teaspoon Lemon juice
Salt
Sugar
Gluten free brown rice flour
Olive oil
