Gluten Free Creamed Peas


Gluten free creamed peas is a perfect side dish on a holiday. Everyone will love it.

Coat the bottom of a pot with olive oil and heat on medium. Add onions stirring often until onions become translucent. You don't want them to brown, just soften.

Add frozen peas to pot with onions and stir gently. You don't want to break up the peas and end up with pea soup. Add water and butter and cook until peas are starting to soften. Add garlic powder, onion powder and salt to taste.


If peas are drying up add a little more water.

Add the flour and tapioca slurry into the pot. Stir together until well combined. Allow the liquid to come to a slight bubble. Simmer, allowing flour to cook well. Add sugar and stir often. Sauce will thicken which is what you want.

I separate my food so that it doesn't become contaminated on a holiday with everyone taking from the same serving dishes.


Place into a serving dish and either serve immediately or cool completely, cover and refrigerate. Reheat in a 250 degree preheated oven covered so it doesn't dry out. Enjoy.


Ingredients:

Olive oil to coat bottom of pan

1/2 a diced yellow onion

4 cups frozen peas

1/2 cup water

2 tablespoons butter

Garlic powder to taste

Onion powder to taste

Salt to taste

2 tablespoons gluten free flour

2 tablespoons tapioca flour mixed with 2 tablespoons hot water

½ cup whole milk

½ cup heavy cream

1/4 to 1/2 teaspoon sugar depending on how sweet you like it
