Gluten Free Crepes With Apple Filling

A delicious sweet crepe dessert you will want to make over and over again.


How to Make the Crepes:

In a large bowl, combine flour, xanthan gum, sugar, salt, applesauce and milk. Whisk well. Add melted butter. Whisk again until smooth.


Refrigerate batter at least 30 minutes.

Spray olive oil onto a preheated skillet at 400 degrees. Brush oil evenly over the surface of the skillet.


Remove batter from refrigerator and mix well. Using a ladle, pour batter onto skillet and using the back of the ladle, immediately swirl the batter in a circle spreading it out thinly.


Cook the crepe until the edges are browned and the bottom is golden. Flip the crepe over and allow to cook on the other side. You may have to flip it back and forth several times. Spray pan with more oil and spread in between batches. Continue process until all batter is used.

How to Make Apple Filling:

Add apples, lemon juice, brown sugar, granulated sugar, cinnamon, and salt to a pot. Stir together well. Add water to pot and stir until all apples are coated in the water.

Cook apples on medium heat stirring fairly often to make sure they don't burn or stick. Watch water level. If it's getting dry, add more water a little at a time. Cook until the apples are very soft. A fork should pierce through them easily.

Mix tapioca starch with hot water and stir well. Pour mixture into apples and stir until dissolved. Cook until the mixture thickens,

Remove from heat and stir in butter and vanilla. Stir well and allow apples to cool completely.


How to Make the Whipped Cream:

For best results, everything should be ice cold. Place your bowl and beaters into the refrigerator for approximately one hour. Remove when you are ready to use them. You want to be sure your heavy cream is very cold. Do not remove from refrigerator until the minute you are going to use it.


Pour cream into your bowl. Add sugar and vanilla. Mix on high with a hand held beater until it becomes whipped cream. This will take a bit, be patient. Do not over mix. Watch it closely. If you over mix it, you will ruin the cream and have to start over.


Putting Together the Crepes:

Spread apple across crepe. Cover apple with whipped cream. Fold crepe however you desire. Serve and enjoy.

For the Crepes:

3 tablespoons butter, melted and cooled slightly

1 cup gluten free flour - I prefer King Arthur's Measure for Measure

1/2 teaspoon xanthan gum

1 1/2 tablespoons sugar

1/4 teaspoon fine sea salt

1 1/2 cups whole milk

1/2 cup unsweetened applesauce

1 teaspoon olive oil


For the Apple Filling

2 green apples peeled and cute into small cubes

1 teaspoon lemon juice

1/3 cup packed light brown sugar

2 tablespoons sugar

1 teaspoon ground cinnamon

pinch of sea salt

1 tablespoon tapioca starch

2 tablespoons hot water

2/3 cups water

1 teaspoon vanilla extract

2 tablespoons unsalted butter


For the Whipped Cream

2 - 4 cups heavy cream

2 - 4 tablespoons sugar

1 - 2 teaspoons vanilla
