Gluten Free Easy Cheesy Eggplant Parmesan

Desiring eggplant parmesan but just don't have the time for all the fuss. Here's an easy cheesy, delicious recipe that won't disappoint. Especially helpful during the busy holiday season.

Wash, peel and slice your eggplant. I sliced mine a bit thin. Next time I will make thicker slices. (see video)

Add sauce to the bottom of a roasting pan. For sauce recipe, click green link. Brush olive oil onto eggplant. Place into grill. Brush the other side with oil and close the grill allowing eggplant to cook. (see video)

While the eggplant is grilling, prepare your breadcrumbs. I used 4C Gluten Free Plain breadcrumbs as I prefer to season myself. I seasoned with salt and garlic powder to taste. (see video)

Remove grilled eggplant from grill and place in a layer into the baking dish. Add another batch of eggplant to grill. (see video)

Add a half cup of olive oil to your breadcrumb and blend together well. Add a little more at a time if necessary. Once you have your first layer of eggplant, top with breadcrumb. (see video)

Slice your mozzarella cheese into thin strips and place over the breadcrumbs. Add more sauce and sprinkle with dried basil. Add some parmesan cheese. Do the same for a second layer minus the basil. (see video)

Place into a preheated 350 degree oven and bake until cheese is melted and bubbly. (see video)

Remove from oven and let sit at least 15 minutes. Serve and enjoy.


Ingredients:

Eggplant

Sauce (mine was homemade and refrigerated from another dish I made)

Olive oil

Gluten free breadcrumbs

Salt

Garlic Powder

Dried Basil

Fresh Mozzarella cheese (gluten free)

Parmesan cheese (gluten free)
