Gluten Free Egg Free Brownies


I made these quick, easy, absolutely amazing brownies in minutes and served them at my mom's birthday celebration along with an ice cream birthday cake and regular peanut butter brownies made by my daughter-in-law.

Pour melted butter into a bowl. Add sugar, vanilla extract and brown sugar and mix well. If brown sugar is hard, put in the microwave for a little bit. Use a potato masher to crush up any hard lumps. Add applesauce and mix. (see video)

In a separate bowl combine gluten free flour, cocoa powder, baking soda and salt. Whisk together well. (see video)

Add the dry ingredients to the wet ingredients and blend until you have a smooth batter. Mix in chocolate chips. (see video)

Brush olive oil into an 8x8 baking pan. Pour batter into pan and even out. Place into a 350 degree preheated oven. Bake approximately 25 minutes or until a toothpick stuck in the middle comes out clean. (see video)

Remove brownies from the oven and allow to cool completely. Serve and enjoy! (see video)


I refrigerate mine in a Tupperware container and they last about 3 days.


Ingredients:

1/2 cup butter, melted

3/4 cups sugar

1/2 cup brown sugar, packed

1/2 cup unsweetened applesauce

1 tablespoon pure vanilla

3/4 cup gluten free flour - I used King Arthur's Measure for Measure with xanthan gum

1/2 cup cocoa powder

1/2 teaspoon baking soda

1/2 teaspoon salt

1/2 cup gluten free chocolate chips - I used Enjoy Life
