Sift gluten free flour into a bowl and add powdered buttermilk, salt, sugar and xanthan gum. If you can use baking powder, add now. If not, you will add the substitute later. Whisk very gently to combine.
In a new bowl mix applesauce, butter, milk, and oil into a bowl and mix well.
In a separate bowl or mixer bowl, whip the heavy cream with one teaspoon sugar until stiff peaks form. Remove from mixer bowl and set aside.

Add dry mixture into the wet ingredients and mix well. Add in baking powder substitute if you didn't add baking powder in step one. Place into the mixer bowl and mix on medium until smooth using the bread tools rather than the mixers you used for the heavy cream.
Gently fold the whipped cream into batter. Don’t over-mix. Pour batter into a loaf pan lined with parchment paper which has been lightly sprayed with olive oil. Place into a preheated 350 degree oven. Bake for about 45-60 minutes, until golden brown and a toothpick comes out clean. If the top of the bread is getting too dark, cover with tinfoil.
Allow to cool 15 minutes in pan. Remove and let cool completely on a rack. Slice with a serrated knife and enjoy.

1/4 cup powdered buttermilk
1 1/2 teaspoons salt 1 tablespoon sugar
1 teaspoon xanthan gum 1 tablespoon baking powder - substitute - 3 teaspoons lemon juice mixed with 3/4 teaspoons baking soda 3/4 cup unsweetened applesauce room temperature
3 tablespoons olive oil 3 tablespoons butter melted and cooled 1/2 cup 2% milk or any milk of your choice 3/4 cup whipping cream, whipped
