This is a perfect on the go item. Grab the bagel in the a.m. and eat on the way to work or school. Pack for lunch with cheese sticks and and fruit.
How to make the coating:
Mince your garlic and onions very small. Place onto a baking sheet lined with parchment paper and sprayed lightly with olive oil. Spray vegetables lightly with olive oil. Be sure to spread out into a single layer. Place into a 350 degree preheated oven for 12 minutes. If the garlic is browned first, remove and place into a bowl. Continue cooking the onion until browned then remove and place into a bowl.
How to make the bagels:
Mix together all ingredients first with a whisk then with your hands. When dough comes together, shape into a big ball. If dough is too dry, add water 1 tablespoon at a time until you you can form the ball.
Move ball of dough onto parchment paper or any dry, clean surface. Sprinkle flour onto parchment paper or any dry, clean surface. Divide dough into equal pieces. Pick up one piece at a time and roll it in the flour then roll into a ball. Next roll each little ball into a log shape and close ends to make a circle. Wet both ends with water and pinch together so it sticks. Place bagels on top of parchment paper sprayed lightly with olive oil.
Lightly brush the bagel tops with melted butter. Sprinkle top with garlic and onion gently pushing into the dough slightly. Place into a 350 degree preheated oven and bake for 25 - 30 minutes until golden brown.
Let cool and enjoy with any spread of your choice. Store covered in the refrigerator. Check out my How To Make Gluten Free Cream Cheese & Gluten Free Chickpea Flatbread and Gluten Free Homemade Apple Butter.
