
My husband's birthday is on New Year's Eve and we usually have a party with 50 to 60 people. In 2020, as we all know, that couldn't happen.
So, I made dinner for only me and him, my parents, and my son and daughter-in-law. He wanted chicken cutlets, his favorite. Everyone else eats meat, I don't. See, why I don't eat meat.
I also made sides of green peas with sautéed red onions in butter and roasted potatoes and carrots. For the roasted vegetables, see recipe below.
Peel, wash and cube/slice your vegetables. Place them in a lightly greased baking pan.
In a separate bowl Mix your oil, melted butter, apple sauce, vanilla and cinnamon. Blend together well. Pour into vegetables and toss so everything is coated well.
Place into a preheated 425 degree oven. Roast approximately 25 minutes to one hour, depending on how much you are making. Just before removing from the oven, I broil for a few minutes.

My daughter-in-law surprised my husband with gluten free brownies for dessert. He was a happy camper!

I can't give amounts, I can only give ingredients. Most Italians don't cook with measurements, they cook with heart. My mom taught me to add ingredients until "it looks good". So, judge for yourself.

Applesauce
Softened butter
Olive oil
