
This is a quick and easy sauce that only takes minutes to make but will be a huge crowd pleaser. Everyone loved it on Thanksgiving. They also loved my Gluten Free Creamy Garlic Sauce.
Cook your spinach in boiling water. I prefer to do mine in the microwave. Set aside and allow to cool. Once cool, chop with a knife into small pieces.
Combine all ingredients including cooled spinach and mix well. Place into a glass bowl with an airtight cover and refrigerate to keep chilled.
Serve cold with falafel balls, eggplant balls or lentil balls or anything you would like.
Ingredients:
1/2 cup gluten free plain Greek yogurt
1 tablespoon lemon juice - I prefer 1 1/2 teaspoons, but the choice is yours
1/2 teaspoon sugar
pinch of garlic powder - McCormick is gluten free unless indicated
1/2 teaspoon salt
1/4 cup cooked frozen or fresh spinach - chopped
