Gluten Free Homemade Bagels

Easy, no boil, gluten free homemade bagels in the air fryer.

How to dehydrate garlic:

I use pealed cloves. Make sure none are bruised.. Cut off the root end of each clove.. Mince garlic.


To dry in the oven, arrange the garlic on a baking sheet lined with parchment paper.


Place into a preheated 175 degree oven for about 25 minutes to partially dehydrate. The garlic will cook more on top of the bagel. (see video)


How to Make the Bagels:

Gather you ingredients.

Combine the flour with the salt.. (see video)

Add in the yogurt and whisk well until the dough is wet. It will be a bit crumbly, but that's fine. Add in the baking soda/lemon mix as it's sizzling and combine. (see video)

Place dough onto a clean floured surface and knead with your hands. Roll it into a ball, If the dough is too sticky, add some gluten free tapioca flour a little at a time until it's easier to work with. (see video)

Cut the ball of dough into 4 equal pieces and roll each piece into a cord about 4 inches long and a little under an inch thick.. (see video)

Attached the ends of the cord together in a circle and pinch the dough to hold together forming the shape of a bagel.


Brush the top and sides with melted butter. Sprinkle on your partially dehydrated garlic. (see video)

Spray the air fryer basket with olive oil. Preheat to 290 degrees.. Place the bagels into the basket and cook for 10 minutes. Raise the temperature to 325 degrees and cook the bagels for 5 more minutes until bagels are golden..

Remove from fryer and cool on a rack for 15 minutes. Serve and enjoy..


Ingredients:

1 cup gluten free measure for measure flour with xanthan gum

1/4 teaspoon salt

1 cup plain Greek yogurt - it must be Greek

2 teaspoons gluten free baking soda mixed with 5 1/2 tablespoons lemon juice -this is your baking powder substitute.. If you can use baking powder, add 2 teaspoons to flour when you add the salt.

Melted butter wash - about 2 to 3 tablespoons of butter

Homemade dehydrated fresh garlic - topping for the bagels

Gluten free Tapioca flour as needed - if dough is too sticky.
