Gluten Free Homemade Rice A Roni

Just because you have to eat gluten free doesn't mean you can't have Rice a Roni. Just make a gluten free version of your own!

Peel and grate 1 medium carrot.

Gluten Free Baked Goods - amazing treats for the upcoming holidays!

Add butter and oil to a large non stick pan and heat on medium. Add carrots to the butter and oil and cook until almost tender. Lower heat and add broken pieces of pasta and white rice and cook for 3 to 5 minutes, stirring often, until the pasta and rice are slightly brown.

Add vegetable broth, parsley, garlic powder, sea salt and water to the pan.

Bring the mixture to a medium boil, cover, and reduce heat to low. Simmer until water is absorbed and rice and pasta are cooked thoroughly, about 15 - 20 minutes, stirring occasionally. Watch closely that liquid doesn't absorb too fast. If it does, add a bit more broth or water as needed.

Serve immediately and enjoy.
