Gluten Free Instant Pot Creamy Garlic Cheesy Pasta

There's no better way to get an amazingly delicious, creamy, garlicky, cheesy meal that's like heaven on a plate. Quick, easy and inexpensive too! It doesn't get any better than that.

Use sauté mode on your Instant Pot. Coat the bottom with olive oil. Once the oil is hot, add in your minced garlic and sauté until it's aromatic. Turn off sauté mode.

Have your vegetable broth near and opened. Pour into pot so garlic doesn't burn. I wound up having to add more broth as my pasta was not completely covered. Add your lemon. (see video)

Add in your pasta and stir making sure all pasta is covered in liquid. It's best to position the pasta to the sides of the instant pot. (see video)

Season with garlic powder and salt, I added a teaspoon, but would add less next time. It was slightly too salty for my taste, but still absolutely delicious. (see video)

Cover pot and cook on High pressure for 6 minutes - adjust according to the pasta you are making. When it beeps signaling it's done, turn to quick release. (see video)

Stir and allow to sit a few minutes on warm. Serve and enjoy.


Ingredients:

1 package Gluten free pasta

Olive oil

Fresh garlic, minced

2 1/4 cups Gluten Free Vegetable broth - more if it doesn't cover all the pasta

1 teaspoon garlic powder

2 tablespoons freshly squeezed lemon juice or lemon juice from a bottle

Salt to taste

1 cup heavy whipping cream - room temperature

1/4 cup Gluten Free Parmesan cheese

Sprinkle of Parsley
