This is a quick, easy, inexpensive meal that comes out perfect. It's a creamy, tangy, bowl of deliciousness.
Turn Instant pot onto sauté mode and allow to heat up. When the inner pot is hot, coat the bottom of pot with olive oil and allow to get hot.

During the holiday season, we must do a lot of mundane things before the big celebration. I had so much fun doing something usually rather boring but due to a Little Ball of Sunshine...
Add garlic and onions and cook for about 2 minutes, stirring often. Add your fresh basil and stir.
Add gluten free pasta over the spices. Pour in broth. Sprinkle salt.
Lastly, pour in all the tomatoes. Don't stir anything together.

Cover the instant pot with the lid. Set pressure to high and cook for 5 minutes. After 5 minutes do a quick release.
Open the lid carefully and stir the pasta. Serve in a pasta bowl and sprinkle parmesan cheese on top if desired.
Ingredients:
1 can of Plum tomatoes - squish the tomatoes slightly with your hands
1/4 can of Diced tomatoes
1 Small onion, finely chopped
Fresh garlic cloves minced - to taste
2 1/4 cups Gluten free vegetable broth
Olive oil to coat bottom of instant pot
Fresh basil leaves - cleaned and chopped
Oregano to taste
Salt to taste
Parmesan Cheese
