
There's so many different ways to make this dish. Use whatever you happen to have in the house at the moment. Any cut of pasta and any vegetables will do. Don't forget to check out Pasta Primavera - Can Easily Be Made Gluten Free.
A quick and easy meal on a weeknight that will fill everyone up without breaking the bank and creating a big mess.

Wash, peel and cut vegetables. I placed peppers, onions, brussels sprouts, string beans and broccoli onto a pan lined with parchment paper. Spray lightly with olive oil. Place into a preheated 400 degree oven for 25 minutes. Check each veggie with a fork to be sure it's soft. Remove from oven and allow to cool slightly.

Place frozen peas and spinach into a microwave safe bowl and add water to cover contents. Microwave between 5 and 8 minutes. Drain and set aside.
As vegetables are roasting and cooking in the microwave, mince garlic. In a large frying pan, heat oil on medium and add garlic. Stir often and do not allow to brown, it will get a bitter taste. Once garlic becomes aromatic, sprinkle in some garlic powder and onion powder. Do not let this burn. Stir and immediately add in all the vegetables. Stir to combine. Simmer on low for a few minutes as pasta is cooking, stirring frequently.

Cook pasta about 2 minutes less than package instructions as it will cook more once combined with vegetables. Do not drain pasta. Scoop out and place into vegetables. Add a few scoops of pasta water. Stir well. If it's too dry, add another scoop or two of pasta water. (see video above)
Serve in a pasta bowl. Add parmesan cheese if desired and mix well. Enjoy.
Refrigerate leftovers and enjoy for lunch or dinner another time.

YOU CAN USE ANY VEGETABLES YOUR HEART DESIRES IN THIS DISH. I USED WHAT I HAD IN THE HOUSE. A COMBINATION OF FRESH AND FROZEN
1/2 Red pepper - thinly sliced
1/2 Yellow onion - cut into small chuncks
6 Garlic cloves - minced
6 large Brussels sprouts cut small
1/2 cup Frozen Broccoli - chop large pieces
1/2 cup Frozen String Beans
1/2 cupFrozen Peas
1 cup Frozen Spinach
Olive oil - judge how much by how much pasta you are making
1 package Gluten Free Spaghetti - I used Tinkyada Organic Brown Rice - you can use any pasta cut you like in this dish.
Garlic powder to taste - McCormick is gluten free unless otherwise noted
Onion powder to taste - McCormick is gluten free unless otherwise noted
Salt to taste
Parmesan cheese to taste - optional
