Gluten Free Peach Cobbler

A gluten free sweet dessert that won't disappoint. You can top with cream or ice cream.

Making the Filling:

  • Place drained peaches, water, sugar and tapioca starch in a saucepan. Bring the mixture to a boil, stirring often. Remove from heat.

  • Pour into a 9 x 13 pan.

  • Add lemon juice and butter and stir well. (see video)

Making the Topping:

  • In a large bowl, combine the flour, sugar, tapioca starch and salt. Mix together well.

  • In a separate bowl mix together the milk and melted butter.

  • Add the wet ingredients to the dry and stir until just combined.

  • Mix together the sprinkling mixture in a small bowl and set aside - sugar, nutmeg, cinnamon.

  • Spoon small dollops of batter over fruit filling and spread evenly with a spatula.

  • Sprinkle with the sprinkling mixture.

  • Place into a preheated 350 degree oven. Bake for 30 minutes, until the top is golden and the fruit is bubbling.

  • Allow to sit 30 minutes to cool. (see video)

Ingredients:


For the Filling:

2 pounds - 16 oz - peaches - I used Dole Peach cups in fruit juice

1/2 cup water

1/4 cup sugar

2 tablespoons tapioca starch

1 tablespoon lemon juice - I use fresh lemons

1 tablespoon butter - melted


For the Topping:

1 cup Gluten Free flour

1/2 cup sugar

1 1/2 teaspoons tapioca starch

1/2 teaspoon salt

2/3 cup milk - room temperature

1/4 cup butter - melted


Sprinkle:

2 tablespoons sugar

1/4 teaspoon nutmeg

1/4 teaspoon cinnamon
