I made this dish along with broccoli and cauliflower in oil and garlic and fried potatoes and onions done in the air fryer as sides for a gathering we had last Sunday.
Scrub your potatoes under cool water. Cut into bite-sized cubes. Coat with olive oil and place in air fryer. Cook until almost soft. Do not overcook, they will cook more later in the pan. If you don't have an air fryer, you can boil them or bake them. (see video)

Wash your peppers, eggplant and zucchini under cool water. Slice the onions and chop your peppers into bite-sized pieces. Add to a frying pan with oil, add salt, stir well and cook covered over medium high heat. Stir often.
While the peppers and onions are cooking, chop the rest of your vegetables. You will add them to the pan once the peppers and onions are cooked to semi soft. (see video)
Add zucchini and eggplant to peppers and onions, stir well to combine and cover. If necessary, add a little bit more oil.
When potatoes are done in air fryer, or however you cooked them, place into a bowl and set aside.
Add into the frying pan with the other vegetables that are cooking once the zucchini and eggplant have cooked down and start to soften. Stir well. Leave uncovered at this point. Continue to stir often. (see video)
Chop fresh garlic while vegetables are cooking. Don't forget to stop to stir the vegetables fairly often. When vegetables are cooked remove from pan and place into a large bowl. Add some more oil to pan and add your chopped garlic. Add a large pat of butter.
Put garlic into the pan. Allow to cook until soft, but not brown. Just before garlic is done, sprinkle in garlic powder. Allow to fry for about 30 seconds in the oil. Don't let it burn. Stand over the pan and stir often. Remove from heat and set aside. (see video)
Open white beans and DON'T DRAIN. Pour into cooked garlic. Place pan back on medium high heat. Bring beans to a semi boil, stiring very often. Add one tablespoon of flour and stir constantly. Allow flour to cook. When beans are soft, mash until smooth until consistency is like a sauce. (see video)
Pour sauce over vegetables. Mix together gently.
Everybody loved the sides along with barbecued porkchops, hot dogs and burgers for those who eat meat and mom's macaroni salad and some store bought potato salad.

I added black beans to the leftovers, heated in the microwave and it was delicious.

Butter
White beans
Gluten free flour (1 tablespoon)
