Gluten Free Potatoes and Eggs

Full of protein, filling, and absolutely delicious. Can be eaten as a sandwich on Italian bread or a roll or in a plate with buttered toast on the side. Some like to add ketchup.

Peel and chop your onions. Peel, wash and chop your potatoes. Place potatoes in cold water so they don't brown.

Place the potatoes in the microwave and cook a few minutes until tender. (see video) Drain and let sit in strainer until you are ready to add them to the dish.

Coat the bottom of the pan with olive oil. Add chopped onions and salt. Cook on medium. Add in tender potatoes and cook until onions are soft and potatoes start to brown. (see video)

Beat your eggs and set aside. Stir the onions and potatoes often. Cut a slice of cheddar cheese into cubes. (see video)

Pour the eggs into the pan with the potatoes and onions and top with cheese. Cook until eggs are completely cooked. (see video)

If you don't have potatoes, you can use frozen tatter tots or frozen French fries (check packaging if you are concerned about gluten) If you use frozen potatoes of any kind, place them into the pan at the same time you put in the onion. Add salt and cook on medium, stirring often. Once everything starts to brown, add your eggs and cheese.


Serve and enjoy.

Yellow onion

Gold potatoes

Water

Salt

Cheddar cheese
