A quick and easy side dish or main dish.

Scrub your potatoes under cool water. Place into a pot of cold water and bring to a boil. (see video)
Boil the potatoes until a fork goes through easily. Remove and place on an oiled baking pan. (see video)
"Smash" the potatoes using the bottom of a cup. Once the potatoes are "smashed" brush on a little olive oil. Then sprinkle on parmesan cheese (make sure it's gluten free) and parsley flakes (McCormick is gluten free) (see video)

Place into a preheated 375 degree oven. Bake about 10 minutes, then broil for another 5 minutes. (see video)
White the potatoes were in the oven, I prepared string beans and chickpeas to accompany the potatoes.
Remove the potatoes from oven and allow to cool a few minutes. Plate and enjoy. (see video)

Gold potatoes
Olive oil
Parmesan cheese
Parsley flakes
(You can also season with garlic powder, onion powder, paprika, red pepper, black pepper and anything else your heart desires. Use all or some)
