Gluten Free Snack Bars or Crumble

Some came out as bars, some came out as crumble. I don't sweat the small stuff. They taste the same either way, so I say, bars or crumble... enjoy.


These gluten free snack bars or crumble are great for when you are on the go. They are also a wonderful accompaniment to breakfast or a late night snack that's not too heavy. If it's a crumble, take it in a container with a lid and bring a plastic spoon.

Preheat oven to 350 degrees. Place rice or oat flakes in a single layer on a baking sheet covered in parchment paper and toast them for 20 minutes until lightly golden.

Place sunflower seeds into a dry pan and roast on medium heat stirring often until they are a golden brown. Remove and allow to cool in a separate bowl.

Place peach juice into a small pot and heat slightly. Mix tapioca flour with water and stir well. Add to peach juice to thicken, stirring often. Remove thickened juice from heat and allow to cool.

Remove toasted rice or oat flakes from oven. Transfer to a large bowl and allow to cool completely. Stir every so often so it cools faster. Mix in the brown sugar, salt, cinnamon, apple, thickened peach juice and sunflower seed butter or peanut butter. Add in sunflower seeds (save some for topping) and chocolate chips (save some for topping). Mix together well.

Add a sheet of parchment paper to a 9″ x 9″ pan, letting the edges drape over the sides. Place the mixture into the pan and press it into an even layer.


Sprinkle the top of the bars with sunflower seeds and chocolate chips. Use a small rolling pin to gently roll over the top to make it as smooth as possible or use the palm of your hand.

Place the pan into the freezer for 1 to 2 hours or more . Remove pan from freezer and use parchment to lift bars out of pan. Use a sharp knife to cut them into rectangles. Store in the refrigerator for up to 3 weeks.


Don't eat until after you refrigerate for a few hours. Serve and enjoy.


Ingredients:

1 cup gluten free, nut free sunflower seed butter or organic natural peanut butter

1/2 cup juice from dole peaches

1 teaspoon tapioca flour

2 teaspoons warm water

2 teaspoon brown sugar

3 1/2 cups rice flakes or oats

1 teaspoon salt

1 teaspoon cinnamon

1/2 an apple cut into very small cubes

Up to 1 cup sunflower seeds - roasted

1/2 cup gluten free chocolate chips - I prefer Enjoy Life brand
