Easy, light, fluffy gluten free soft flour tortillas. Batter made in minutes. Batter is similar to pancake batter. No rolling pin necessary.
Cinco de Mayo is right around the corner. These tortillas for tacos are great for a May 5th celebration!

Add flour, tapioca flour, xanthan gum and salt to a large bowl and blend well. Pour water in slowly and whisk. You want a thin batter. Add water as you go until you get the consistency you desire.

Heat grill to 400 or 500 degrees, if your grill goes that high. Rub some butter on grill. Pour batter onto grill and spread it around evenly until it's thin. Allow to cook until bubbles start forming and bottom is browning a bit. Flip and pat down with spatula. Cook until the same happens on the other side. Flip several times. The middle will bubble, that's ok. You want to be sure they are cooked thoroughly. This takes approximately 10 minutes with several flips.

1 1/4 cup gluten free flour
1/2 cup tapioca flour
1/8 teaspoon xanthan gum
1/4 teaspoon salt
1 1/2 cups to 2 1/2 cups room temperature water
