Gluten Free Vegetable Pancakes

A fun appetizer or side dish that will delight all.


Wash, peel and grate or chop vegetables.

Using cheesecloth, wrap grated zucchini and squeeze out as much water as you can. Do the same with the grated potatoes.

Gluten Free Appetizers

Place into a large bowl with enough room to mix everything together. Mix vegetables well.

Add flour, tapioca flour, breadcrumbs, parmesan cheese, salt and yogurt, Mix together well.

Take a palm size amount of mixture and form a pancake. Place individual pancakes onto a plate or platter. Sprinkle top with garlic powder and more breadcrumb. Gently pat breadcrumb down into the pancake.

Spray your grill that's been preheated to 400 degrees well with olive oil. Brush oil around grill. Place pancakes breadcrumb side down onto the grill. Sprinkle with more breadcrumb and pat it down. Flatten pancake lightly with spatula. Allow to cook at least 5 - 8 minutes on one side then flip to the other side. Allow to cook about 10 more minutes.


Preheat oven to 400 degrees. Line a baking pan with parchment paper. Remove pancakes from grill - I like grilling first to brown them and I like the fried taste - and place onto the parchment paper. Bake 15 minutes in oven.


If you don't want to fry first, spray parchment paper with olive oil, place pancakes on it breadcrumb side down, sprinkle with more breadcrumb and pat then spray with olive oil. Bake on 425 degrees at least 30 minutes.

Remove from oven and let cool. Serve and enjoy with your favorite dipping sauce.

Ingredients:

3 zucchinis, grated and water squeezed out

1 or two yellow potatoes - peeled, grated

1 carrot, grated or I used matchstick carrots chopped small

3 or 4 cloves of garlic, minced

yellow onion - small amount - chopped small

1/2 cup gluten free flour - I prefer King Arthur's Measure for Measure

2 tablespoon gluten free tapioca flour

2 tablespoons gluten free breadcrumbs and more to sprinkle later

1/4 cup plain Greek yogurt

salt to taste

parmesan cheese to taste

garlic powder to taste

olive oil to spray grill
