
Inspired by this recipe. What is tian? French baked vegetables!
While veggies are naturally gluten free, the ingredients also used are gluten free, hence the title.
This is healthy dish featuring most people's favorite vegetables. A perfect gluten free vegetable tian with a tender, cheesy, satisfying flavor.

Preheat oven to 425 degrees. Lightly spray your baking dish on bottom and sides with olive oil and brush to spread evenly.
Wash all vegetables and slice all about the same size and thickness. I peel the eggplant because I don't like the skin.

Use a round casserole dish of your choice and place sliced vegetables in a circular direction alternately layering the vegetables until entire casserole dish is filled. Squeeze the garlic slices between some layers intermittently. Lightly salt all the vegetables. Sprinkle on seasonings. Spray lightly with olive oil. Watch video below for procedure.

Cover the casserole dish with foil and bake for 1 hour to 1 hour 15 minutes. Remove from oven and add cheese, place back in oven uncovered and cook another 10 - 15 minutes or until vegetables are soft. Start checking vegetables after 45 minutes. If they look dry, spray with a little more olive oil.
Cooking time will depend on the thickness of your vegetable slices. Don't cut too thin as it will turn to mush and fall apart. You want sturdy veggies to spoon out and serve.

Remove from oven. Allow to stand about 5 to 10 minutes. Serve and enjoy. I served mine with leftover mashed potatoes. Yes, I know there's potatoes in the dish, but I didn't want my mashed potatoes to go bad and I felt like having them. So, I did!
Ingredients:
1 medium eggplant
1 medium or large zucchini
1 large golden potato
2 medium tomatoes.
3 cloves of fresh garlic
salt to taste
dried oregano - McCormick is gluten free unless otherwise noted.
dried basil - McCormick is gluten free unless otherwise noted.
olive oil for spraying
cheese of your choice - feta, mozzarella, parmesan, cheddar, etc.
