Gluten Free Vegetarian Biscuit Sandwiches

A delicious appetizer or as a main course with a side salad.

Make Gluten free biscuit recipe. You will need to cut out bottoms and tops. (see video)

Wash, clean and cut red peppers. Place into air fryer and spray with a little bit of olive oil on both sides. Cook for approximately 8 minutes until on 370 degrees. Flip once while cooking. You want peppers semi soft but not cooked completely as they will go into the oven with the biscuits and cook through. (see video)

Wash and cut your eggplant. Place into air fryer and spray with a little bit of olive oil on both sides. Cook for approximately 8 minutes until on 400 degrees. Flip once while cooking. You want eggplant semi soft but not cooked completely as they will go into the oven with the biscuits and cook through. (see video)

I chilled the dough much longer and it was very cold, therefore, I rolled it out with a rolling pin. I used my ravioli cutter to cut the biscuits. Spray olive oil in muffin tins and spread evenly on bottom and sides with a brush. Place the cut out biscuit into the bottom of the tin. (see video)

On top of the biscuits place a piece of red pepper, then mozzarella cheese, parmesan cheese and eggplant. Cover with another biscuit. Spray top of biscuits with olive oil.


Place tins into a preheated 425 degree oven and bake for 12 - 15 minutes until biscuits are golden brown, cheese is melted and peppers and eggplant are cooked thoroughly. (see video)

Serve warm and enjoy.
