Gluten Free Vegetarian Shepherds Pie


This gluten free vegetarian shepherds pie is a great alternative to the traditional recipe. Everyone loved it and it's healthier, less calories and allergy friendly. It's an inexpensive meal that can be put together fairly quickly.

Make mashed potatoes (see my post The Secret to Mashed Potatoes only add some heavy cream with the milk for this recipe and Parmesan cheese and of course the butter. Set aside.

While potatoes are steaming for your mashed potatoes, rinse your lentils in a colander then place them into a pot of water. Bring to a boil and simmer until tender - about 20 to 25 minutes. Drain in colander. (For lentil soup recipe, click green link) (see video)

Peel and dice the carrots and chop celery and onion. Slice garlic. Coat the bottom of a large frying pan with olive oil. Add the carrots and celery and allow to cook until they start to soften. Next add the onions and allow them to get soft. Add the garlic and tomato paste and sauté until fragrant. Don't let the garlic brown, it gets bitter. (see video)

Add the lentils, broth, peas, green beans and salt. Reduce liquid but make sure the lentil mixture is not dry, you want it to be a bit moist. (see video)

Scoop the lentil mixture into a pan and spread evenly then top with mashed potatoes. Spread the potatoes evenly over the lentils. Sprinkle Parmesan cheese over the top of the mashed potatoes. (see video)

Place into a preheated 400 degree oven. Bake for 25 minutes. Broil for a few minutes until browned on top. Serve and enjoy.

I also made a ground turkey meatloaf for the meat eaters and fresh spinach in oil and garlic. My parents, my husband and my son and daughter-in-law loved everything.


Ingredients: - Most ingredients I simply judge by eye.

Approximately 2 lbs of potatoes

Milk - judge by eye for the potatoes

Heavy cream - judge by eye for the potatoes

Butter - judge by eye for the potatoes

Salt to taste

Parmesan cheese - judge by eye for the potatoes, plus additional for topping

1 pound lentils

1 large yellow onion

2 large carrots

1 stalk celery

3 cloves garlic

Pinch tomato paste

Olive oil

Vegetable broth

Frozen peas

Frozen green beans

IF YOU CAN EAT CORN, ADD IT. I AM ALLERGIC, SO I LEAVE IT OUT.
