
Sometimes you are in the mood for a change. It's fun to switch things up a bit. This gluten free vegetarian sweet potato shepherd's pie is just the answer.
Wash sweet potatoes under cool water to get dirt off the outside. Place the sweet potatoes into a large pot and cover with water. Bring to a boil, then reduce to a simmer on medium heat and cook until tender. Drain and run cold water into the pot to cool the potatoes. When they are cool enough to touch, place them into a container to be peeled.
Remove the skin from the sweet potatoes with your hands. Place them into a bowl. Cut a small slit into each potato and place a tab of butter into the slit. Mash the sweet potatoes with a potato masher. Add salt.

Wash celery and peel and wash carrots. Dice and slice. Coat the bottom of a large pot with olive oil. While the potatoes are cooking, sauté the carrots and celery until tender.

Rinse lentils under cool water. Add into the pot with carrots and celery and vegetable broth. Bring to a boil and then turn down to a simmer for 15 minutes or until just tender.

Stir the peas into the pot of lentils, cook for an additional 5 minutes. Season the lentil mixture with garlic powder, onion powder and salt to taste.
Pre-heat oven to 425 degrees.

Spray a casserole dish with olive oil on bottom and sides. Spread the lentils out evenly in pan. Dollop the mashed sweet potatoes on top and spread out evenly.

Bake for 15 minutes. Allow to cool and set for 15 minutes. Serve and enjoy.
Ingredients: For The Mashed Sweet Potatoes: 3 large sweet potatoes
salt to taste

2 large carrots peeled and sliced
3/4 cups frozen peas
3 cups vegetable broth
1 cup dry lentils - rinsed under cool water
1 teaspoon garlic powder - McCormick is gluten free unless otherwise noted
1 teaspoon onion powder - McCormick is gluten free unless otherwise noted
salt to taste
olive oil
