Gluten Free Vegetarian/Vegan Lentil Balls


An excellent replacement/substitute for traditional meatballs. Accompanies some of the pasta replacements well.

Clean lentils well as shown in video above. Pour 3 cups of cold water into a saucepan and bring to a boil. Add in 1 cup of cleaned lentils. Cover and lower heat. Stir occasionally. Cook approximately 25 minutes until lentils are soft and water evaporated. At around 8 minutes, uncover and cook uncovered the remainder of the time. Keep your eye on it. You don't want all water to evaporate and lentils to burn. When lentils are done, place into a bowl and allow to cool completely.

Once lentils are cold, add in flour, salt, onion powder, garlic powder, parsley and oil. Mix well with hands as if you were mixing meatloaf or meatballs. The lentils will squish and that's fine.

Roll lentil mixture into tight balls. Place in air fryer and squirt with olive oil. Turn over and squirt bottom. Cook on 400 for 15 minutes, turn balls over and cook another 10 minutes. If you don't have an air fryer, cook in a preheated 425 degree oven.

I place lentil balls over spaghetti squash with eggplant and garlic sauce. It cuts up similiar to a meatball. I mixed together. It was delicious. Enjoy.


Ingredients:

Lentils - I used Jack Rabbit brand

1/2 cup Gluten free flour

Salt to taste

Onion powder to taste

Garlic powder to taste

Parsley to taste

1/2 teaspoon Olive oil and also to spray
