
Colder weather will be here soon in New York. There's nothing like a gooey hot grilled cheese and soup on a cold day or especially a snowy day.

Mix all ingredients for waffles in a large bowl. Whisk well until there are no lumps. Make waffles using your waffle iron. I used this recipe for the waffles and just left out the vanilla.

Preheat grill to 400. Spread butter on one side of one waffle. Place cheese on the other waffle. Place one waffle on top of the other to make a sandwich. Spread butter onto the grill and let it melt. Place the sandwich onto the grill. Allow to grill until golden brown. Flip with a spatula. Grill that side until golden brown and cheese is melted.

Remove from grill and place onto a plate. You can open the sandwich and add additions of your choice in the middle and then close the sandwich again, or you can eat as is.

Ingredients:
For the Waffles:
2 tablespoons sugar
2 tablespoons olive oil
1/4 cup applesauce
1 cup gluten free flour - I use King Arthur's Measure for Measure which already contains xanthan gum
1/2 cup gluten free tapioca flour
1 teaspoon baking soda
1/4 teaspoon salt
1 cup milk - I use 2% but you can use any milk of your choice
For the Sandwich:
Any cheese or combination of cheeses of your choice
butter - for spreading on sandwich
Additions:
sliced tomatoes
roasted peppers
caramelized onions
fresh spinach
if you are a meat eater - ham, bacon, turkey or a combination
