Gluten Free Instant Pot Potato Soup

An easy, quick, inexpensive Gluten free potato soup you will want to make over and over again.

Peel your potatoes and chop them then place them into cold water. When you are ready to use them, pour them into a colander and rinse under cool water. (see vide0)


If you are using ham, bacon or both, put a drop of olive oil in instant pot. set instant pot on sauté and cook until almost soft. Remove from pot and set aside. Add the onion to the drippings in the pot and cook until the onions are translucent, stirring frequently. (see vide0)

If you don't use the meat, add a few drops of oil to bottom of instant pot and sauté onions until translucent. I do not use meat. so I started with a few drops of oil. (see video)

Add the flour and cook. Be sure to stir continuously. Add a large pat of butter and continue stirring. Turn off the Instant Pot and remove the insert to stop the cooking process. (see video)

When ready, place insert back into the holder. Add vegetable broth and scrape any brown bits from the bottom of the pot, especially if you used meat.


Add potatoes to the pot and stir well making sure they are all covered in liquid. Close and lock the lid of the Instant Pot. Cook on high pressure for 20 minutes. (see video)

Once the pot beeps, use quick release to release steam and make sure pot is on off. Mash potatoes with a potato masher to thicken soup, leaving some chunks. Add the cheese, milk and cream, stirring until everything is incorporated. Season with salt. (see video)


Add any meats used back into the soup and stir well.

Cover instant pot and set on warm for 10 minutes. (see video)


Open and serve. The soup looks smooth but is actually chunky, the chunks fall to the bottom.


Ingredients:

Olive oil

3 pounds of potatoes peeled and cut into large pieces

1 medium onion, diced

3 tablespoons gluten free flour

1 large pat of butter

1 32-oz container vegetable broth

1 1/2 cups shredded cheddar cheese

1 cup whole milk

1 cup heavy cream

Salt to taste

Cubed ham or bacon if you want to use meat - sauté ham or bacon or both before onions if you choose to use either or both.
