Lovely Leftovers!

I love leftovers. Many dishes taste better when made in advance or leftover. After sitting in the refrigerator and then being reheated, the flavors tend to marry. Not only do they taste delicious, but, it's a quick meal with no mess and if you're really hungry or tired, there's no waiting and no clean up.

I made bean patties last night for dinner (for recipe see my blog post) This time I used red kidney beans instead of black beans. They came out perfect, a bit crunchy, a little spicy, smooth and creamy on the inside.

On the side I had left over Mashed Butternut Squash and Sweet Potato. I made enough the other night for several meals. It's a great side for many different main courses.

The two remaining bean patties were saved for another time. I had one for lunch today. It's nice to come home from running errands and just pull something out of the fridge and heat it in the microwave. Especially when you are starving and don't want to wait for prep time.

Growing up, every Thursday night was leftover night in our house. Back then, we didn't have a microwave, so we had to heat everything on the stove top and in the oven. What a mess. So many pots and pans to clean up and so many containers to wash from the week's worth of leftovers. It's much easier today. Many containers go from the fridge, to the microwave to the dishwasher! Thank you, powers that be!
