Mom's English Muffin Pizza - Easily Converted Gluten Free/Vegetarian


Speaking of family traditions, mom and dad made an all time favorite from when I was growing up. Back then, I was able to eat gluten, English muffin pizza was a fun treat for dinner. I didn't develop my allergies until about 10 years ago.


My parents used to own a pizzeria years ago. They still work well together to turn out a fun and delicious meal. They did not make it gluten free or vegetarian, but it can easily be converted. For gluten free options, click green link.

This is a great childhood memory and I made it for my own kids when they were young too. It's quick and easy meals like this that bring comfort and lasting memories. With two days of nasty weather, I made several comfort foods - Gluten Free Vegetable Dumpling Soup and Gluten Free Vegetarian Crockpot Lasagna.

Toast your English muffins until they are a bit crisp. Remove from toaster oven and place onto a pan covered in tinfoil (for easy clean up). (See above video)

Cover the muffins in sauce. Mom used leftover homemade sauce. For recipe, click green link. She and Dad topped with Mozzarella cheese and then Pepperoni. (leave off pepperoni for vegetarian). (see video) You can add parmesan cheese if desired. I like it, mom didn't want it.

Place the tray back into the toaster oven and cook on about 400 degrees until the cheese is melted. If you don't have a large enough toaster oven, you can use a conventional oven. (see video)

Ingredients:

English muffins (gluten free muffins are available)

Red sauce (I prefer homemade but you can use jarred)

Mozzarella

Pepperoni (leave off for vegetarian)

Parmesan cheese if desired
