
Family dinner last night. Everyone enjoyed.

Per request, here are the recipes for the dishes I made for dinner for the family and myself.

Rice:
I made 4 cups of rice so I used 4 cups of liquid. All seasoning is to taste. If you are making less, you will have to judge on seasonings.
Dice yellow onion. Coat the bottom of a pot with olive oil and a pat of butter. Heat on medium. Add onions and a pinch of salt. Stir onions often. As they soften, add frozen peas. Cover and lower heat and simmer until onions are very soft and peas are on the soft side. Stir often. Just before it's done, add garlic powder, and onion powder to taste and stir. When at the right consistency, remove from heat and set aside.
Cook rice according to package directions in the vegetable broth rather than water and add two pats of butter to the broth. Once rice is done, set aside and let sit about 3 minutes.
Add the onions and peas to the rice and combine thoroughly. Add Sazon seasoning (I used 2 packets) use less if you are making less. Stir well. Serve and enjoy.
Ingredients:
White Minute rice
Gluten Free Vegetable broth
Frozen green peas
Yellow onion
Salt
Garlic powder
Onion Powder
Sazon seasoning
Olive oil
Butter

Broccoli:
Peel garlic if necessary and slice into pieces. Set aside.
Wash broccoli and trim off any pieces that need it. Steam broccoli to desired consistency. Set aside.
Cook garlic in olive oil. Do not brown, just cook until aromatic. Pour over broccoli and add salt to taste. Stir well and serve.

Chicken Tenders:
Pour breadcrumbs into a large bowl and season to taste with garlic powder, dried parsley, salt and parmesan cheese. Stir it up well.
Beat eggs
Dip chicken into egg and then breadcrumbs.
Heat olive oil in pan, Place chicken into pan. Cook on one side until golden brown then flip. If oil is getting too hot, lower heat. Remove chicken from pan and place onto a paper-towel lined dish to absorb some of the oil. Gently pat top of chicken with another piece of paper towel. Move into a service dish. Serve and enjoy.
I rarely fry, mostly I used my air fryer, but when I make chicken or meatballs, the family likes it fried.
Ingredients:
Chicken tenders
Plain breadcrumbs - I prefer to season my own
Garlic powder
Dried parsley
Salt
Parmesan cheese
1 or 2 eggs
Olive oil

Gluten Free Bean Patties:
I made this for myself to eat. Every time I make it, I make it a bit different. (Gluten Free Black Bean Patties)
Rinse and drain beans and put into a big bowl. Add a little olive oil. Mash beans either by hand or with an electric blender. Leave some chunks for texture.
Add diced red onion, breadcrumbs, flour, garlic powder, and salt. Mix well with your hands like you would mix the meat for meatballs. Form into patties.
Place into air fryer and spray both sides with olive oil. Cook on 400 hundred about 8 to 10 minutes on each side depending on your desired crispiness. If you don't have an air fryer, place into 400 degree oven on greased parchment paper and cook approximately 15 minutes on each side.
Ingredients:
Black beans - drained and rinsed
White beans - drained and rinsed
Diced red onion
Garlic powder
Salt to taste
Gluten Free plain breadcrumbs
Gluten Free flour
Olive oil

Sweet Potatoes:
Scrub sweet potatoes, dry and place onto a microwave-safe plate. Make a slit on both sides with a knife so it doesn't blow up in microwave. Microwave on high approximately 5 - 8 minutes depending on the size of your potatoes and how many you are cooking at once.
Potatoes are done when a knife sinks deep into them and inside feels soft.
