Steamed Spaghetti Squash And Homemade Sauce

I steamed my spaghetti squash in my steamer pot. If it won’t fit into the pot whole, then cut it in half. If it fits in whole, poke some holes in it so it does not explode. That would be messy.


To make the homemade sauce, coat the bottom of your pot with olive oil. Chop red onion and yellow onion and fry in olive oil. Add some salt to the onion. Do not fry too high, you do not want to burn it. Add in chopped garlic. Stir often. do not let garlic burn or it will get bitter. Add a little tomato paste and let that fry stiring often. Add in your tomatoes (I used Tuttorosso crushed). Add more salt and fresh basil. Let simmer, stirring often. Cook for at least a half an hour. Why I don't eat meat!


Check squash in between. When the flesh of the squash is soft, remove the squash from the pot. Peel the flesh with a fork and it will come out looking similar to spaghetti, hence the name. I added black beans for protein. Enjoy!


I can't give amounts, I can only give ingredients. Most Italians don't cook with measurements, they cook with heart. My mom taught me to add ingredients until "it looks good". So, judge for yourself.

Spaghetti squash

Black beans

Spaghetti sauce
