Sweet Potato Pie - Two Versions

Disclaimer: I made this recipe to bring to a cousin's house for a family get together. I made a gluten free version for myself. I chose not to put the typical pecan topping on any pies as I know some in the family are allergic.

There are two recipes here - Regular Sweet Potato Pie and below Gluten Free Sweet Potato Pie.

THIS RECIPE IS NOT GLUTEN FREE. IT CONTAINS THE SWEET POTATO PREPARATION BEFORE MAKING THE PIES.

Sweet Potato Pie - Not Allergy Friendly - Made for family and friends.

Wash your sweet potatoes under cool water to remove dirt. Do not peel potatoes. Place into a pot of water and bring to a boil. Boil potatoes approximately 45 minutes to 1 hour. When they are very soft - a fork goes completely through easily - drain and rinse with cold water. Allow potatoes to cool. (see video)

When potatoes are cool enough to handle, place onto a clean towel and allow to cool completely. (see video)

Once the potatoes are completely cooled, peel off the skin with your fingers. It will come off easily. Remove any dark spots, sprouts or roots. Place into a large bowl. (see video)

Mash the sweet potatoes with a potato masher then switch to a mixer or KitchenAid if you have one. . Mix until smooth. (see video)

Measure out your potatoes into a separate bowl. Add in all ingredients below for the regular recipe - not allergy friendly. (see video)

Blend well with the hand mixer or KitchenAid. Spoon into pie crusts. (see video)

Place into a preheated 350 degree oven on middle rack. Bake for approximately 1 hour until a toothpick stuck in the middle comes out clean. Allow to cool completely. Top with whipped cream or any topping of your choice. Or you can eat plain.


Ingredients:


Regular Recipe: - Made with store bought crust


2-1/2 cups fresh sweet potatoes

1 Pie Crust

8 tablespoons (1 stick) unsalted butter, melted, divided

3/4 cup packed light brown sugar, divided

1/2 cup granulated sugar

3/4 cup heavy cream

2 teaspoons vanilla

1/2 teaspoon salt

3/4 teaspoon ground cinnamon

1/4 teaspoon freshly grated nutmeg

2 large eggs

1/4 cup flour

Gluten Free Sweet Potato Pie - Allergy Friendly - free from gluten, nuts, soy, corn & eggs


How To Make Gluten Free Crust: Similar to Gluten Free pumpkin pie crust.

In a large bowl, whisk together all the crumble ingredients except the butter. The butter will be added later.

Add melted butter and mix until thoroughly combined. You want a crumble so don't overmix.


Brush pie plate with olive oil Spoon crumble into a 9 inch pie plate and press down. (see video)


How to Make Pie Filling:


Follow instructions above up until the cooked sweet potatoes are beat smooth in a bowl. Then follow recipe below to make gluten free - allergy friendly recipe. Of course, this is free from gluten, nuts, soy, eggs and corn. There might be other ingredients people are allergic to. You can choose to substitute as necessary.

Measure out your potatoes into a separate bowl. Add in all ingredients below for the gluten free, allergy friendly recipe. (see video)

1/2 cup Gluten free Tapioca flour

1/2 cup sugar

1 teaspoon baking soda

1/2 teaspoon salt

8 tablespoons butter, melted

2-1/2 cups fresh sweet potatoes

1 gluten free pie crust - I made my own - see recipe below

8 tablespoons (1 stick) butter, melted

1/4 cup granulated sugar

3/4 cup condensed milk

2 teaspoons vanilla

1/2 teaspoon salt

3/4 teaspoon ground cinnamon

1/4 cup applesauce - replaces eggs

1/4 cup gluten free flour
