Vegetarian Chili

Why I don't eat meat!


Coat bottom of pot with olive oil. Chop red onion and cleaned red pepper. Heat oil on medium, add onions and peppers and stir. Salt and stir again. Lower heat, you want the onions and peppers to get soft, not caramelized.


When onions and peppers are soft add crushed tomatoes. Stir and let tomatoes cook for a while. Stir often.


Mix in beans and stir. Add salt to taste and a pinch of sugar if the tomatoes are bitter. Let simmer, covered slightly, and stir occasionally for about 15 minutes.


Serve and enjoy. You can serve over white rice if desired. You can eat with gluten free bread.


I can't give amounts, I can only give ingredients. Most Italians don't cook with measurements, they cook with heart. My mom taught me to add ingredients until "it looks good". So, judge for yourself.


Ingredients:

Olive oil

Red onion

Red pepper

Crushed Tomatoes

Beans - Cannellini, Garbanzo, Black, Kidney

Salt

Sugar - possibly if tomatoes are bitter.

White rice - if desired

Gluten free bread - if desired
