Zucchini Spirals in Marinara Sauce - Gluten Free

I purchased pre-spiraled zucchini yesterday and made this quick and easy dish last night. My dad loved it and so did I.

Place zucchini spirals into a strainer and rinse well under cool water. Set aside and allow to drain. Coat the bottom of a frying pan with olive oil and heat on medium. Add zucchini and allow to cook, stiring often.

Peel and mince garlic cloves. Once zucchini has cooked down, add in garlic and salt to taste. Allow garlic to cook, again stiring often. Open beans and don't drain. Place half the can of beans into a chopper and pulse into a smooth sauce. Add to pan. Add the rest of the can of beans to the pan. Cook until beans and garlic are well combined and hot.

Add marinara sauce to pan. For my homemade recipe, click link. I used leftover sauce from the eggplant parmigiana I recently made. Stir well and allow to heat and cook for approximately 5 - 10 minutes. Add parmesan cheese to taste and stir well.

Move into a serving bowl. Serve individually and enjoy.


Ingredients:

Zucchini - spiraled

Olive oil

Salt to taste

6 cloves of garlic - minced

1 can Cannellini beans undrained

Marinara sauce - mine is leftover homemade sauce

Parmesan cheese to taste
